MON DOI LUANG

ORGANIC COFFEE
OUR BEAN ORIGIN

Each and every single bean comes from one organic coffee farm. Mon Doi Luang Organic Coffee Farm is located in Mae Mae village, Chiang Dao, Chiang Mai, Thailand occupying more than 50 acres. The altitude ranges from 1,000 to 1,200 metres above mean sea level.

The Farm and the Village are among mountains, one of which is called "Doi Luang", the third highest mountain in Thailand. The village and its surrounded area are parts of Mae Ta Man upstream forests, which have high soil and water minerals providing various types of nutritions for coffee trees to grow without using any chemical fertilisers. Further, the heathy condition of the forest provides bird habitat and greater biodiversity.

 

A clean and sustainable stream is also used in our coffee processing creating a unique taste and flavor unlike no other. The roasts are heart-crafted. The results are nothing but amazing coffee.

LIGHT

light brown in color, with a light body and no oil on the surface of the beans. Light roasts have a toasted grain taste and pronounced acidity. The origin flavors of the bean are retained to a greater extent than in darker roasted coffees. Light roasts also retain most of the caffeine from the coffee bean.

medium brown in color with more body than light roasts. Like the lighter roasts, they have no oil on the bean surfaces. However, medium roasts lack the grainy taste of the light roasts, exhibiting more balanced flavor, aroma, and acidity. Caffeine is somewhat decreased, but there is more caffeine than in darker roasts.

DARK

dark brown in color, like chocolate, with a sheen of oil on the surface and a heavy body in comparison with the lighter or medium roasts. The amount of caffeine is substantially decreased.
